Rice bowls hold separate piles of seared beef, spinach and carrot, finished with set eggs and a spoonful of tangy gochujang sauce.
Keeping the toppings separate gives Beef Bibimbap its contrasts before everything is mixed at the table. Each vegetable gets a short turn in the skillet, preserving its color and bite.
Use hot rice as the base so the bowl stays warm while you arrange the toppings. Thin beef slices cook quickly; have the vegetables cut and the sauce mixed before you start searing.
Method
Mix gochujang, rice vinegar, sugar and water for the sauce. Toss sirloin steak with soy sauce and garlic.
Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Sear steak in two batches for each until browned and 145°F. Set aside to rest.
Add 1 tablespoon vegetable oil. Cook carrots for until crisp-tender, then transfer out. Wilt baby spinach for and drizzle both vegetables with sesame oil.
Heat remaining vegetable oil over medium-low heat. Add eggs, cover and cook for until whites and yolks are set.
Divide cooked rice among bowls and arrange beef, carrots, spinach and eggs on top. Serve with the gochujang sauce for mixing.
