Ingredients

  • White beans2 cans · 400 g each, drained and rinsed
  • Tomatoes3 medium · washed and chopped
  • Spinach4 cups · washed
  • Garlic · optional2 cloves · peeled and minced
  • Paprika · optional1/2 tsp · ground

Method

  1. Drain and rinse the canned beans.
  2. Wash and chop tomatoes.
  3. Wash spinach and mince garlic if using.
  4. Warm a little olive oil in a wide skillet.
  5. Cook tomatoes with a pinch of salt over medium heat for 6–7 minutes until softened and juicy.
  6. Add garlic and paprika, if using, for the final 30 seconds.
  7. Stir in beans and a splash of water.
  8. Simmer gently for 4–5 minutes; mash a few beans against the side of the pan to make a creamy sauce.
  9. Fold in spinach and cook for 1–2 minutes until wilted and everything is hot.
  10. Taste and adjust salt and pepper before serving.
