Soft white beans with tomato & spinach
A warm, spoonable bean dinner with a silky tomato sauce and a handful of greens.

Ingredients
- White beans2 cans · 400 g each, drained and rinsed
- Tomatoes3 medium · washed and chopped
- Spinach4 cups · washed
- Garlic · optional2 cloves · peeled and minced
- Paprika · optional1/2 tsp · ground
You may also need oil, salt and pepper from your pantry. Preparation and storage guidance is included with the method.
Method
- Drain and rinse the canned beans.
- Wash and chop tomatoes.
- Wash spinach and mince garlic if using.
- Warm a little olive oil in a wide skillet.
- Cook tomatoes with a pinch of salt over medium heat for 6–7 minutes until softened and juicy.
- Add garlic and paprika, if using, for the final 30 seconds.
- Stir in beans and a splash of water.
- Simmer gently for 4–5 minutes; mash a few beans against the side of the pan to make a creamy sauce.
- Fold in spinach and cook for 1–2 minutes until wilted and everything is hot.
- Taste and adjust salt and pepper before serving.
Cooking and storage notes
- Wash produce before preparing and use clean utensils.
- Refrigerate leftovers promptly in shallow containers and reheat cooked dishes until hot throughout.
