Ingredients

  • Tofu400 g · firm, drained
  • Spinach6 cups · washed
  • Garlic · optional2 cloves · peeled and minced
  • Soy sauce · optional1 tbsp · measured

Method

  1. Pat firm tofu thoroughly dry and cut into small cubes.
  2. Wash spinach.
  3. Mince garlic if using.
  4. Heat a thin layer of oil in a wide non-stick skillet over medium-high heat.
  5. Add tofu in one layer and cook for 8–10 minutes, turning occasionally, until golden on several sides.
  6. Lower the heat.
  7. Add garlic if using and stir for 30 seconds.
  8. Add spinach in handfuls and stir for 2–3 minutes until wilted.
  9. Add soy sauce if using, or a pinch of salt, and a splash of water.
  10. Toss for a minute until hot throughout.
  11. Serve as a light dinner; add a separately prepared grain if you want a fuller meal.
