Tangy sauerkraut meets flaky smoked haddock, hard-boiled egg and crisp rye bread, with a little honey softening the sharp dressing.

Briny fish and fermented cabbage give sauerkraut and fish salad plenty of character with very little dressing. The rye pieces add crunch, while the egg rounds out the sharp edges of the sauerkraut.

Poach smoked haddock before flaking it; smoked does not always mean cooked. Drain the cabbage well and add the toasted bread at the last moment so it stays crisp rather than soaking up the dressing.

Method

  1. Lower the eggs into simmering water and cook for until the yolks are set. Cool under cold water, peel and quarter.

  2. Meanwhile, cover the smoked haddock with water in a shallow pan. Poach at a gentle simmer for until it flakes easily and reaches 145°F. Drain, remove skin and bones, and flake.

  3. Toast the rye bread for until crisp, then cut into cubes. Whisk vegetable oil, honey and black pepper in a bowl.

  4. Toss the sauerkraut with the dressing. Fold in the haddock, arrange the eggs on top and add the rye cubes just before serving.

Forkue tips

  • Rinse exceptionally sharp sauerkraut briefly, then squeeze it dry before adding the dressing.
