Chicken simmers in a thin, peppery tomato broth with ginger and onion, giving Ghanaian light soup its warmth and clean, flowing texture.
The broth stays deliberately thin in Ghanaian Chicken Light Soup. Blended tomato and aromatics season the liquid without a roux or seed paste, letting the chicken and chile carry the bowl.
Bone-in pieces give the water flavor as they simmer. Use ordinary roasting chicken for the timing here; a mature stewing hen needs much longer to soften and should not be substituted without allowing extra cooking time.
Method
Blend half the onion, ginger and garlic with 1/2 cup water. Combine with chicken thighs, salt and black pepper in a soup pot.
Cover and cook over medium-low heat for , turning once, until the chicken releases its juices and the aromatics smell cooked.
Blend tomatoes, remaining onion and scotch bonnet with 1/2 cup water until smooth. Add to the pot with tomato paste and the remaining 4 cups water.
Bring to a simmer and cook partially covered over low heat for until the chicken is tender and reaches 165°F. Skim the surface as needed.
Taste the broth and stir gently to distribute the tomato. Serve in deep bowls with plenty of liquid around each piece of chicken.
Forkue tips
- For milder soup, simmer a whole intact scotch bonnet in the broth instead of blending it, then remove it before serving.
Storing and reheating
Store the chicken in its broth in the refrigerator for 3 days, or freeze portions for 2 months. Warm gently in a covered pot so the light soup does not reduce into a sauce.
