About Ghanaian food
Ghanaian meals often bring a starch together with a deeply flavored soup, stew or pepper sauce. Groundnuts give soup body, red palm oil rounds out bean and leafy stews, and fresh or smoked fish adds savory depth. Rice, yam, plantain, maize and cassava appear in different forms across the country, from waakye to banku and kenkey.
Texture matters as much as seasoning: a light soup should flow, plantain should be ripe enough for the intended preparation, and mashed greens should retain a little roughness. Ginger, onion and chile build many savory bases. Start with one soup or stew and its accompaniment, then add fresh avocado or a vegetable side to vary the plate.
Waakye, jollof rice, red red, kelewele, groundnut soup and meals with banku, kenkey or fufu are well-known examples. Regional and household variations make the wider food culture much broader than any short list.
Banku is cooked by stirring a fermented dough, commonly maize with cassava, into a smooth mass. Kenkey is based on fermented maize dough and is wrapped before its final cooking.
Spinach is a practical substitute for cocoyam leaves, though softer and milder. Drain it well; fresh cocoyam leaves need thorough cooking and cannot use spinach's brief cooking time.
It is primarily savory. Plain peanuts or unsweetened peanut butter provide richness, balanced by tomato, aromatics and often chile, rather than added sugar.
