Crisp fish and potato croquettes with green chile, ginger and cumin, coated in crumbs and shallow-fried to a deep golden shell.

Flaked haddock and mashed potato make Fish Fofos tender inside, with a breadcrumb crust that crackles when you bite through it. Ginger, garlic and fresh cilantro season the filling all the way through.

Let the fish drain thoroughly and the potatoes steam dry before mixing. Excess moisture makes the logs hard to shape and can split the coating in the pan.

Method

  1. Boil the potatoes in water for until tender. Drain, let steam dry and mash without adding liquid.

  2. Meanwhile, cover the haddock with water in a skillet. Bring to a gentle simmer and poach over low heat for until it flakes easily and reaches 145°F. Drain thoroughly and flake, checking for bones.

  3. Mix cooled fish and potato with green chile, cilantro, cumin seeds, black pepper, garlic, ginger, rice flour, salt and one egg. Shape into 15 short logs.

  4. Beat the remaining eggs in a shallow bowl. Dip the logs in egg and then breadcrumbs. Chill for to firm the coating.

  5. Heat 1/3 inch vegetable oil in a wide skillet over medium heat to 350°F (175°C). Fry in three batches for each, turning until golden on all sides and the centers reach 160°F. Drain on a rack.

Forkue tips

  • Keep the logs compact and even so they are easy to turn without splitting.

Storing and reheating

Refrigerate for up to 2 days. Reheat on a rack at 375°F (190°C) until hot and crisp, about 12 minutes; microwaving softens the crumb.
