Chicken, cabbage and bean sprouts toss with springy wheat noodles in a savory soy and oyster sauce coating.

Well-drained noodles make Chicken Chow Mein a stir-fry rather than a steamed tangle. Chicken sears separately before the vegetables and sauce meet the noodles in the hot pan.

Choose thin wheat noodles and cook them just until flexible. Drain thoroughly and loosen any clumps before frying; a crowded skillet needs two batches to keep the ingredients moving.

Method

  1. Boil wheat noodles for , or the package time, until just tender; drain well. Mix soy sauce, oyster sauce and sesame oil.

  2. Heat vegetable oil in a wide skillet over medium-high heat. Cook chicken breasts for until browned and 165°F, then transfer out.

  3. Stir-fry green cabbage, bean sprouts and garlic for until crisp-tender. Add noodles, chicken and sauce and toss for until hot; finish with scallions.
