Soft spiral buns wear a sticky dark-brown-sugar and cinnamon coating, with tender centers beneath their caramelized surfaces.
Rolling the dough ropes through spiced sugar gives Zeeuwse bolussen a coating between every coil. A short, hot bake sets the buns while preserving their soft centers, then turning them over keeps the sticky underside on top.
Use dark brown sugar and let the first coating become tacky before rolling again. Keep the spirals loose enough to expand during their final rise.
Method
Mix flour, instant yeast, milk, sugar, egg, butter, salt and cardamom. Knead for until smooth and elastic, then cover and rise for until doubled.
Mix dark brown sugar and cinnamon on a tray. Divide dough into ten pieces, roll into short ropes and coat with some of the spiced sugar. Rest for until tacky.
Roll each rope through the remaining sugar, stretching it to about 14 inches. Coil loosely into a spiral, tuck the end underneath and place on a silicone-lined baking sheet. Cover and rise for until puffy.
Heat the oven to 475°F (245°C). Bake for until risen and set in the centers with bubbling sugar beneath. Rest for , then carefully turn each bun over onto a lined tray while the coating is still warm. Cool before serving.
