Open baguettes bake under mushrooms, ham, smoked sausage and melted cheese, with pickles, chives and a zigzag of ketchup.

Cooking the mushrooms until dry keeps zapiekanki crisp underneath their generous topping. Two cheeses melt over the meat and vegetables, while pickles and ketchup give the warm baguettes a sharp, sweet finish.

Use small baguettes with a light crumb and spread the mushroom mixture right to the edges. A quick toast before topping helps the bread hold its shape.

Method

  1. Heat the oven to 400°F (200°C). Split baguettes lengthwise and toast cut-side up on a sheet pan for until lightly crisp.

  2. Heat butter and vegetable oil in a skillet over medium heat. Cook onion for until soft, add mushrooms and cook for until their liquid evaporates. Add garlic and black pepper for , then remove from the heat and stir in mayonnaise.

  3. Spread mushrooms over the baguette halves. Top with cheddar cheese, ham, kabanos sausage and mozzarella. Bake for until hot throughout and the cheese bubbles and browns.

  4. Finish with dill pickles, chives and ketchup. Cut into manageable pieces and serve while the bread is crisp.
