Ground pork, mashed potato and warm spices fill a double-crust meat pie with crisp edges and a tender, sliceable center.

A little mashed potato binds the filling in tourtiere, catching the pork juices without making a heavy gravy. Cinnamon, allspice and nutmeg bring warmth rather than sweetness beneath the buttery pastry.

Cool the filling before assembling so the crust stays firm. Two ready-made pie crusts keep the job manageable; choose dough sized for a 9-inch pie plate.

Method

  1. Cover the potato with water, bring to a boil and simmer for until tender. Drain and mash. Meanwhile, heat sunflower oil in a skillet over medium-high heat and cook ground pork and onion for until browned and the pork reaches 160°F.

  2. Stir garlic, cinnamon, allspice, nutmeg, vegetable stock, salt and black pepper into the pork. Simmer for until little liquid remains, then stir in the mashed potato. Spread on a plate and cool for .

  3. Heat the oven to 400°F (200°C). Line a 9-inch pie plate with one pie crust, add the cooled filling and cover with the second crust. Crimp the edges, cut steam vents and brush with beaten egg.

  4. Bake for until the crust is deeply golden above and underneath. Rest for before slicing.
