Charred eggplant flattens into a tender fan under a golden egg coating, with smoky flesh and crisp, lacy edges.

The skin chars first in tortang talong, giving the flesh a smoky flavor before it meets the eggs. Keeping the stem attached makes the softened eggplant easier to dip, move and turn in the skillet.

Use long, slender Asian eggplants, not large globe eggplants. Cook them until they collapse easily; firm flesh will not flatten into an even omelet.

Method

  1. Heat the broiler to high with a rack 6 inches below the heat. Place Asian eggplants on a foil-lined sheet pan and broil for , turning often, until the skins char and the flesh collapses.

  2. Cool for . Peel away the charred skin, keeping the stems attached, and flatten each eggplant gently with a fork. Beat eggs and salt in a shallow dish.

  3. Heat 1/2 tbsp vegetable oil in a skillet over medium heat. Dip one flattened eggplant into the eggs, lay it in the pan and spoon a quarter of any loose egg around it. Fry for per side until golden and the egg is fully set. Repeat with the remaining eggplants, egg and oil.

Forkue tips

  • Drain any liquid released by the peeled eggplant before dipping; excess moisture thins the egg coating.

Storing and reheating

Keep the eggplant omelets in a covered container in the fridge for 3 days. Reheat in a lightly oiled skillet over medium-low heat until hot, turning once to refresh both sides.
