Buttery potatoes mash together with tender kale and sweet shallots, topped with warm slices of smoked sausage.

A sturdy potato mash gives stamppot its comforting body, while finely cut kale brings a little texture to each forkful. Cooking the greens separately keeps control over their tenderness before they are folded into the potatoes.

Use floury potatoes for a fluffy base and add warm milk gradually. The kale should be tender but not watery, and fully cooked smoked sausage needs only gentle heating.

Method

  1. Cover potatoes and bay leaves with water in a large pot and add 1/2 tsp salt. Bring to a boil and simmer for until potatoes crush easily. Drain and remove bay leaves.

  2. Meanwhile, melt 1 tbsp butter in a wide skillet over medium heat. Cook shallots for until soft. Add kale, measured water and remaining salt; cover and cook over medium-low heat for until tender.

  3. Put smoked pork sausage in a saucepan with water to cover. Heat to a bare simmer and warm for , or follow its package instructions; drain and slice.

  4. Warm milk in the empty potato pot over low heat for until steaming. Add potatoes and remaining butter, then mash with nutmeg and black pepper.

  5. Fold kale and shallots into the mash, leaving any watery liquid behind. Divide among bowls and top with warm sausage.
