Chuck roast slowly softens in lemon and warm spices, then fills toasted flatbreads with garlicky yogurt, crisp lettuce and tomato.

The slow cooker gives beef shawarma wraps tender shreds rather than thin grilled slices. Chuck absorbs the lemon-spice broth as it cooks, then returns to a small amount of its juices so the filling stays moist without soaking the bread.

Choose a compact roast with visible marbling. Skim the fat from the cooking liquid before tossing it with the beef, and add the cool vegetables only when you are ready to wrap.

Method

  1. Mix beef stock, 2 tbsp lemon juice, cumin, paprika, salt, ginger, turmeric, cayenne, cinnamon, coriander and cloves in a slow cooker. Turn the beef chuck roast in the liquid.

  2. Cover and cook on low for until the meat pulls apart easily and is well above 145°F. Rest on a board for , then shred, discarding large pieces of fat.

  3. Skim fat from the cooking liquid. Toss the beef with enough liquid to keep it juicy; reserve the rest for reheating.

  4. Mix Greek yogurt, garlic and remaining lemon juice. Spread over flatbreads and add beef, lettuce and tomatoes. Fold the sides inward and roll tightly.

  5. Toast the wraps seam-side down in a dry skillet over medium heat, in three batches, for on the first side and on the second, until lightly browned.

Forkue tips
