Golden strips of ripe plantain curl around a savory salt cod filling, with parsley and a little lime to balance their caramelized sweetness.
Sweet and salty meet in plantain rolls, where soft fried fruit wraps around flakes of seasoned cod. Long slices give enough room for a small spoonful of filling, and a toothpick keeps each roll together on the platter.
Choose yellow plantains with black patches that still feel firm. Very ripe fruit turns fragile in the pan; green plantains stay too stiff to roll around the filling.
Method
Cover thin pieces of salt cod with cold water and refrigerate for , changing the water 3 times. Drain and simmer in fresh water over low heat for until the fish flakes easily. Taste a flake; if still very salty, repeat in fresh water. Drain, remove any bones and flake.
Heat 1 tbsp of the vegetable oil in a skillet over medium heat. Cook onion for until soft, then garlic for . Stir in cod and black pepper for until hot. Remove from heat and add lime juice and half the parsley.
Peel plantains and cut lengthwise into 1/4-inch-thick strips. Heat the remaining vegetable oil in a wide skillet over medium heat until a plantain edge sizzles when dipped in.
Fry plantain strips in 3 batches for per side until golden and soft enough to bend. Drain on paper towels and let cool just enough to handle.
Place a small spoonful of cod filling at one end of each plantain strip. Roll gently and secure with a toothpick. Arrange on a platter and scatter with remaining parsley.
