Crisp starch edges, softly set eggs and plump oysters make a Singapore hawker omelette with plenty of texture.
A thin starch batter gives Orh Luak (Oyster Omelette) its chewy patches and crisp edges. The eggs cook around that base, while the oysters go in toward the end so their centers stay plump. It is a familiar Singapore hawker snack with a very particular texture.
Use a well-seasoned skillet and let the batter set before breaking it up. Drained oysters are essential: their liquor can flood the pan and turn crisp starch into a soft sheet.
Method
Whisk the tapioca starch, rice flour, water and 1 tsp fish sauce into a thin batter. Mix the rice vinegar and red chili in a serving bowl.
Heat the vegetable oil in a 10-inch skillet over medium-high heat. Stir the batter again, pour it into the pan and cook for until translucent with crisp edges.
Pour the eggs over the starch base. Cook for until the underside sets, then break into large pieces and turn. Add the garlic and scallions and cook for until fragrant.
Push the omelette to one side and add the oysters with the remaining fish sauce. Cook for , turning gently, until the oysters reach 145°F and the eggs are fully set. Fold together and fry for to crisp the edges.
Transfer to a plate, scatter with cilantro and serve with the chili vinegar for dipping.
