Slow-braised lamb and kidneys sit beneath overlapping potatoes with crisp golden edges. Onion, carrots and savory gravy soften underneath.
The potato lid in Lancashire Hotpot does two jobs: the lower slices absorb gravy while the exposed edges turn crisp. Lamb shoulder and kidneys bring a deep savory flavor that needs only a little Worcestershire sauce.
Slice the potatoes evenly and keep the first part of the bake covered. Uncover only after the meat is tender, then raise the heat to brown the top without drying out the filling.
Method
Heat the oven to 325°F (165°C). Melt 2 tbsp butter in a wide ovenproof casserole over medium-high heat. Brown lamb shoulder and lamb kidneys in batches for total; transfer to a plate.
Cook onions and carrots in the same pan over medium heat for until softened. Stir in flour for , then add Worcestershire sauce, chicken stock, salt and black pepper.
Return meat and juices, add bay leaves and bring to a simmer. Arrange potatoes in overlapping layers on top. Melt remaining butter and brush over the potatoes.
Cover and bake for until the lamb is fork-tender, the kidneys are cooked through above 160°F and the potatoes yield easily to a knife.
Uncover, raise the oven to 425°F (220°C) and bake for until the potato edges are golden. Rest for before serving; remove the bay leaves as you portion.
