Eggs bake with feta, mozzarella and cream cheese into a golden, crustless slice. Sesame seeds add a light crunch above the tender, salty center.

Without pastry, Keto Banitsa becomes a soft egg-and-cheese bake with the salty richness of feta and the stretch of mozzarella. A small amount of baking powder lifts the mixture as it sets, then the top settles slightly while cooling.

Let the melted butter cool before whisking it into the eggs. Break the cream cheese into small pieces so it disperses, and pull the pan when the middle is set rather than waiting for a hard, dark crust.

Method

  1. Heat the oven to 350°F (180°C). Grease an 8-inch square baking dish with the reserved teaspoon of butter.

  2. Whisk the eggs until evenly blended, then slowly whisk in the remaining melted butter. Stir in the mozzarella, cream cheese, feta and baking powder until distributed.

  3. Pour into the dish and scatter with sesame seeds. Bake for until golden and the center is set with no liquid egg, reaching 160°F.

  4. Rest for before cutting into four portions. The center will settle a little as steam escapes.

Forkue tips

  • For a vegetarian version, select mozzarella and feta made with vegetarian rennet; cheese labels vary.

Storing and reheating

Refrigerate covered for up to 3 days. Warm slices gently in the microwave or covered at 325°F; prolonged heating can make the eggs rubbery.

Keto Banitsa: FAQ

Is there any pastry in this version?

No. Eggs and cheese provide the structure, so the texture is closer to a tender crustless bake than a flaky traditional banitsa.

Why did it sink after baking?

Some settling is expected as the steam escapes. A deeply sunken, wet center suggests it needed longer in the oven before cooling.

How do I store and reheat Keto Banitsa?

Refrigerate covered for up to 3 days. Warm slices gently in the microwave or covered at 325°F; prolonged heating can make the eggs rubbery.

How long does Keto Banitsa take?
