A dense steamed pudding packed with raisins, molasses and warm spices, sliced while warm so the buttery crumb stays soft.

Dark molasses gives Figgy Duff its rounded sweetness and deep color, while raisins swell in the moist heat. There are no figs in this version; the fruit is tucked into a firm dough before it goes into its pudding bag.

Leave space inside the cloth for the pudding to expand, and keep the water at a steady simmer. A loose boil can knock the bag against the pot and cook the outside unevenly.

Method

  1. Mix flour, brown sugar, baking powder, ginger, allspice and cinnamon. Toss in the raisins to coat them evenly.

  2. Stir in butter, molasses and water to form a firm, cohesive dough. Place on a clean damp cotton pudding cloth and tie securely, leaving an inch of room above the dough for expansion.

  3. Lower onto a trivet in a large pot of boiling water, with enough water to cover the bag. Reduce to a steady simmer, cover and cook for , topping up with boiling water as needed.

  4. Lift out carefully and drain for . Untie the cloth and turn out; the pudding should feel firm and a skewer should emerge without raw dough. Slice warm into eight wedges.
