Toasted pita shards tumble through romaine, cucumber and tomato with a lemon-sumac dressing that turns the edges pleasantly tart.
Adding the bread last gives Fattoush its contrast between juicy vegetables and crisp pita. The dressing catches on the broken edges while the larger pieces stay crunchy.
Choose firm tomatoes and dry the lettuce thoroughly. Sumac supplies a fruity tartness beyond lemon; mix it into the dressing early so its flavor spreads evenly through the salad.
Method
Heat the oven to 375°F (190°C). Toss pita breads with 1 tablespoon olive oil and bake on a sheet pan for until crisp and golden.
Whisk remaining olive oil with lemon juice, sumac and salt. Combine romaine lettuce, cucumber, tomatoes, radishes and mint.
Toss the vegetables with dressing, then fold in cooled pita just before serving.
Forkue tips
- Break the pita into uneven bite-size shards rather than tiny crumbs.
Storing and reheating
Keep vegetables, dressing and pita separate for up to 2 days; store pita airtight at room temperature. Once tossed, eat promptly before the bread softens.
