Blueberries burst through a soft vanilla crumb beneath rounded golden tops. A quick hand-mixed batter keeps the muffins tender.
Stirring less makes Blueberry Muffins lighter: the batter only needs enough mixing to moisten the flour. The berries go in last so they stay whole and leave small pockets of juice as they bake.
Use a standard twelve-cup muffin pan and fill the wells evenly. Frozen berries can go in without thawing, although they may need a little longer in the oven than fresh fruit.
Method
Heat the oven to 375°F (190°C). Line a twelve-cup muffin pan with paper liners.
Whisk the flour, sugar, baking powder and salt. In another bowl whisk the eggs, vegetable oil, milk and vanilla extract.
Fold the wet ingredients into the dry until almost combined, then gently fold in the blueberries. Divide among the twelve liners.
Bake for until the tops spring back and a toothpick inserted away from a berry comes out clean. Cool in the pan for , then transfer to a rack.
