Beef slowly softens in a tomato-soy sauce with lemon and bay, then joins browned potatoes and carrots in a glossy, butter-finished gravy.

A salty-tart marinade seasons Beef Asado before its long, gentle braise. Tomato paste deepens the sauce, and a small amount of butter stirred in at the end rounds out the lemon and vinegar.

Chuck works well because its connective tissue softens during the simmer. Cut it into large pieces that can hold their shape, and add the vegetables late so they do not disappear into the gravy.

Method

  1. Combine beef chuck, soy sauce, vinegar, black pepper, bay leaves, lemon juice and tomato sauce. Refrigerate for while preparing the vegetables.

  2. Heat 1 tbsp olive oil in a Dutch oven over medium heat. Cook onion for until soft, then garlic and tomato paste for until fragrant.

  3. Add the beef with all its marinade and beef stock. Bring to a simmer, cover and cook over low heat for until nearly fork-tender, stirring occasionally.

  4. Heat the remaining olive oil in a skillet over medium-high heat. Brown potatoes and carrots for , turning regularly, then add them to the beef.

  5. Simmer partly covered for until vegetables are tender, the beef pulls apart and its center is well above 145°F. Remove bay leaves, stir in butter and rest off the heat for before serving.

Forkue tips

  • If the sauce reduces before the beef softens, add water a few tablespoons at a time and keep the simmer gentle.
