Potatoes and cauliflower steam until tender in a cumin-scented skillet, then cook uncovered so the tomato coating clings to their edges.

Keeping the vegetables in fairly large pieces gives Aloo Gobi distinct bites instead of a mash. A little water and a tight lid soften the potatoes, then uncovered cooking drives away excess moisture.

Cut the potatoes smaller than the cauliflower because they take longer to soften. Stir by folding gently from underneath once the vegetables are tender, preserving the florets.

Method

  1. Heat vegetable oil in a wide covered skillet over medium heat. Add cumin seeds and onion; cook for until the onion softens and the seeds smell toasted.

  2. Stir in garlic, ginger, turmeric and cayenne pepper. Cook for , then add tomatoes and cook for until they slump.

  3. Add potatoes, cauliflower, salt and water. Cover and cook over medium-low heat for until a knife slips into the potato cubes.

  4. Uncover and cook for , folding gently, until excess liquid evaporates and the vegetables are coated. Scatter with cilantro.

Forkue tips

  • A wide pan lets moisture escape quickly during the final uncovered cooking.

Storing and reheating
