Roll snugly without stretching the wrappers, and leave space between each roll in the basket. The timing allows for two batches of six in a large air fryer; a smaller basket will need another round.
Method
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the ground pork and cook for , breaking it into small pieces, until browned and cooked to 160°F.

Set a wrapper with one corner toward you. Place a portion of filling below the center, fold that corner over it, tuck in both sides and roll tightly. Moisten the last corner with a little of the water and press closed; repeat.
Heat the air fryer to 350°F (175°C). Brush the rolls all over with the remaining 1 tbsp oil and arrange six in a single layer with gaps. Cook for , turn, then cook for until crisp and golden.
Repeat with the remaining six rolls. Serve two rolls per person with the plum sauce for dipping.
