About Georgian food
Walnuts, garlic, fresh herbs and tart fruit give Georgian food much of its range. Ground nuts thicken sauces and bind vegetable starters; cilantro and basil brighten slow-cooked tomatoes and meat. Sour plum sauce cuts through rich beef soup, while cheese-filled breads and broth-filled dumplings bring a different kind of comfort.
A table can hold several dishes at once: cool eggplant rolls, beans, bread and a hot stew need not compete for attention. Start with good walnuts and generous herbs, then add coriander and a little fenugreek. Taste sour sauces before adding them, because their salt and acidity vary. For home cooking outside Georgia, mozzarella with feta can stand in for harder-to-find local cheeses.
Khachapuri cheese bread and khinkali soup dumplings are widely recognized. Bean stews, walnut-filled vegetables, herb-rich chicken and tart beef soups show how varied the cooking is beyond those two favorites.
There are many bean, vegetable and walnut dishes, including lobio and pkhali. Check cheese rennet and broth when needed; a vegetable-looking plate is not automatically vegetarian.
Use a smaller amount of ordinary ground fenugreek, which tastes stronger and can become bitter. It is an approximation rather than an identical spice; start sparingly and follow the recipe's measured substitute.
Hold the dumpling by its top, bite a small opening and sip the broth before eating the rest. The thick twisted top may be left behind. Give the filling a moment to cool before the first bite.
